Smoke grenades are ignited in the same way as any time-delay hand grenade, except the filler material burns relatively slowly, emitting a lot of smoke from a hole in the bottom of the grenade, rather than exploding. See http://www.howstuffworks.com/grenade.htm for details (and an animation of what happens when the safety pin is pulled).

The M15 Smoke Grenade contains 15 ounces of white phosphorous, which is ignited with an M206A2 fuse. The white phosphorous burns for about 60 seconds at a temperature of 5000 degrees Fahrenheit. This intense heat causes the smoke to rise quite rapidly, making it less desirable for screening purposes but useful for incendiary and signalling purposes.

The AN-M8 HC White Smoke Grenade contains 19 ounces of Type C, HC (hexachloroethane) smoke mixture which is ignited with an M201A1 fuse. The hexachloroethane burns for 105 to 150 seconds, emitting a dense cloud of white smoke useful for screening and signalling.

The M18 Colored Smoke Grenade contains 11.5 ounces of colored smoke mixture (basically the same as the white smoke grenade but also contains a dye). Standard smoke colors available are green, red, violet, and yellow. The mixture burns for 50 to 90 seconds, and is useful for screening, signalling, and target/landing zone designation.

Actually, M18 smoke grenades do not use the same mixture as the M8 HC. Hexachloroethane is an eye irritant and CNS depressant. HC smoke is used mainly in riot situations or in artillery smoke shells against exposed troops.
